  • In a large bowl, combine the mashed potato, all-purpose flour, egg, salt, pepper, and ground roasted cumin seeds.
  • Gently knead the mixture until a smooth dough forms. Add more flour if the dough is too sticky. Kneading develops the gluten in the flour, which gives the gnocchi their structure.
  • Divide the dough into smaller portions. Roll each portion into a long log about 1 inch thick.
  • Cut the logs into ¾-inch pieces. Gently press each piece onto the tines of a fork to create ridges, which helps the sauce cling to the gnocchi.
  • Bring a large pot of salted water to a rolling boil. Add the gnocchi to the boiling water. They are cooked when they float to the surface, about 2-3 minutes.

  • Drain the cooked gnocchi and toss with 1 teaspoon of olive oil to prevent sticking.
  • Heat the remaining olive oil in a pan over medium heat. Sauté the gnocchi for a few minutes until lightly golden brown and crispy.
  • In a bowl, combine the yogurt mixture, sweet tamarind chutney, green chutney mixed with mayonnaise, black salt, cumin seeds, and red chili flakes.
  • Add the sautéed gnocchi to the chaat mixture and toss gently to coat.
  • Line a round cookie cutter with cucumber slices. Fill the center with the gnocchi chaat mixture. Refrigerate for 5 minutes to allow the flavors to meld. Remove the cookie cutter. Garnish with pomegranate seeds and nylon sev. Serve immediately and enjoy!
