  • Heat the vegetable oil in a pan over medium heat.
  • Add the chopped onions and sauté until translucent and softened, about 5-7 minutes.
  • Add the green chili, ginger-garlic paste, and curry leaves. Sauté for another minute until fragrant.
  • Add the chopped tomatoes and sauté until they break down and soften, about 3-5 minutes.
  • Reduce the heat to low, then add the turmeric powder, red chili powder, and salt. Mix well.
  • Stir in the garam masala and chopped cilantro.
  • Add the crumbled paneer and sauté for 2-3 minutes to coat it with the spices. Cover and cook for another minute to allow the flavors to meld.
  • Remove the paneer masala from the heat and set aside.
  • Heat a non-stick tawa or griddle over medium heat.
  • Once hot, reduce the heat to low. This prevents the dosa from burning and ensures even cooking.
  • Pour about 1/2 cup of dosa batter onto the hot tawa. Using the back of a ladle, quickly spread the batter in a circular motion to form a thin crepe.

  • Drizzle a little ghee around the edges and over the surface of the dosa. This adds flavor and crispiness.
  • After a minute, gently press the dosa with a spatula to ensure even cooking and a crispy texture.

  • Once the edges start to brown and the dosa becomes crispy, place 2-3 tablespoons of the prepared paneer masala in the center.
