Ingredients
 

Vegetables

  • 4 cup Cabbage shredded
  • 2 medium Potato peeled and cubed into 1-inch pieces
  • 2 medium Onion finely chopped
  • 2 Chili green, slit lengthwise
  • 1 medium Tomato finely chopped

Garnish & Other

  • 2 cup Coriander dhania, finely chopped, for garnish
  • 2 tbsp Oil vegetable or coconut oil

Instructions
 

Preparing the Aromatics

  • Heat oil in a wok or large pan over medium heat. Add asafoetida, followed by mustard seeds. Let the mustard seeds splutter.
  • Add curry leaves and sauté until fragrant (about 30 seconds).
  • Add finely chopped onions and green chilies. Sauté for 3 minutes until softened.

Cooking the Potatoes and Cabbage

  • Add the cubed potatoes to the pan and fry at medium-high heat until lightly golden. This should take about 8-10 minutes.
  • Stir in the shredded cabbage and fry for 5 minutes at high heat, then reduce heat to medium.
  • Add turmeric powder and salt. Stir well to coat the vegetables.

Simmering and Finishing

  • Cover the pan and cook until the potatoes are almost tender (about 10-15 minutes).
  • Add the chopped tomatoes and cook for another 5 minutes, until softened.
  • Stir in the sambar powder and cook for 1-2 minutes on high heat to evaporate any excess moisture.

Serving

  • Garnish with fresh coriander leaves. Serve hot with rice, dal, roti, naan, or paratha.
