- 1 large Egg lightly beaten

- 1/2 tsp Salt or to taste
- 1/4 cup Heavy Cream or milk for a lighter sauce
- 4 oz Cherry Tomatoes halved
- 3-4 Basil Leaves fresh, roughly chopped
- 1 tbsp Olive Oil for boiling gnocchi
Instructions
Prepare the Gnocchi
- Combine mashed potatoes, flour, salt, pepper, and egg in a large bowl. Gently mix until a dough forms. Knead lightly until smooth.
- Roll the dough into 1-inch thick ropes. Cut into 1-inch pieces. Use a fork to create ridges (optional).
Cook the Gnocchi
- Bring a large pot of salted water to a boil. Add olive oil.
- Gently drop the gnocchi into the boiling water. Cook until they float to the surface (about 2-3 minutes).
- Remove with a slotted spoon and set aside.
Make the Sauce
