Ingredients
 

Dry Ingredients

  • 1 cup Corn Flour also known as makkacholam flour. gluten-free., yellow
  • 1/2 cup Bansi Rava fine semolina; regular rava can be used as a substitute.

Wet Ingredients

  • 1/2 cup Yogurt also known as curd.
  • 1 cup Water add more as needed to adjust batter consistency.

Flavorings and Garnish

  • 1.5 tsp Salt adjust to taste.
  • 1 Tomato finely chopped, seeds removed.
  • 2 Chili finely chopped. adjust quantity based on spice preference., green
  • 4 tbsp Coriander also known as dhania. finely chopped.
  • 1-2 tbsp Oil for cooking. olive oil or any neutral oil works well.

Instructions
 

Prepare the Batter

  • In a bowl, combine the bansi rava and yogurt. Mix well to remove any lumps, adding 1/2 cup of water gradually.
  • Let the mixture rest for 10 minutes to allow the rava to soften.
  • Add the yellow corn flour to the rava mixture. Gradually add the remaining 1 cup of water, mixing until a smooth batter forms. Adjust water as needed to achieve a pourable consistency, not too thick or thin.
  • Stir in the chopped tomatoes, green chilies, coriander leaves, and salt. Mix thoroughly.

Cook the Dosas

  • Heat a non-stick dosa pan or griddle over medium heat.
  • Pour 1/4 cup of batter onto the hot pan, spreading it thinly into a circular shape using the back of the ladle.
  • Drizzle a small amount of oil around the edges of the dosa.
  • Cook for 2-3 minutes, or until the edges begin to lift and the bottom is golden brown.
  • Carefully flip the dosa and cook the other side for 1-2 minutes, until lightly browned.
  • Remove the dosa from the pan and repeat with the remaining batter.

Serve

  • Serve the hot dosas immediately with your favorite chutney or sambar.
