  • Drain the soaked millets and lentils. Grind them in a blender or wet grinder, adding water gradually, until a smooth dosa batter is formed. The batter should be slightly thicker than pancake batter.
  • Add salt to the batter and mix well. Cover the bowl and let the batter ferment in a warm place for 6 to 8 hours, or until it becomes light and airy. Fermentation enhances the flavor and texture of the dosa.
  • Heat a non-stick dosa tawa or griddle over medium heat. Lightly grease the surface with oil.
  • Pour a ladleful of batter onto the hot tawa and spread it in a circular motion to form a thin crepe. Drizzle a little oil around the edges of the dosa.

  • Cook for 1-2 minutes, or until the edges start to crisp and the bottom turns golden brown. Flip the dosa and cook the other side for a minute.
  • Serve the hot, crispy millet dosa immediately with your favorite chutney and potato curry.

Recipe Notes

Good To Know

  • For an even crispier dosa, spread the batter thinly on a well-heated cast iron tawa and drizzle a few drops of oil around the edges as it cooks.
  • If you prefer a slightly tangy flavor, allow the fermented batter to sit for an extra 2-3 hours before making dosas, especially in cooler climates.
  • For added nutrition and taste, sprinkle finely chopped onions, green chilies, or fresh coriander on the dosa just after spreading the batter on the tawa.
  • Leftover batter can be stored in the refrigerator for up to 3 days; bring it to room temperature before making dosas for the best texture.

Expert Tips

  • To prevent sticking, ensure your tawa is properly seasoned before making dosas. Heat it with a little oil until shimmering.
  • For perfectly round dosas, use a ladle to pour the batter onto the tawa and quickly swirl it outwards in a circular motion.
  • Experiment with different fillings! From classic potato masala to paneer or spiced vegetables, the possibilities are endless.

Storage Instructions

  • Store leftover dosas in an airtight container at room temperature for up to 24 hours, or in the refrigerator for up to 3 days. Reheat them on a tawa or in a microwave.
