Ingredients
 

Grains & Legumes

  • 1 cup Pearl Millet
  • 1 cup Lentil also known as black lentils; ensure it's split and skinned., black, urad dal
  • 2 cup Rice use short-grain rice for best results.

Seasoning

  • 1.5 tsp Salt adjust to taste

Cooking

  • 2-3 tbsp Oil for frying; use coconut oil or any preferred oil.
  • Water as needed Water for grinding and adjusting batter consistency.

Preparation

  • Soak the pearl millet, black gram, and rice in ample water for at least 3-4 hours, or preferably overnight.

Grinding

  • Grind the soaked grains into a smooth batter using a wet grinder or a high-speed blender. Add water gradually to achieve the consistency of a crepe batter. The batter should be slightly thick but pourable.

Resting & Seasoning

  • Transfer the batter to a large bowl. Add salt and mix well. Let the batter ferment for at least 6-8 hours at room temperature or overnight in a warm place. This fermentation process enhances flavor and texture.

Cooking the Dosa

  • Heat a non-stick or cast-iron skillet or griddle over medium heat. Lightly grease the pan with oil.
  • Pour ¼ to ⅓ cup of batter onto the hot pan, spreading it thinly in a circular motion to form a thin crepe.
  • Cook for 2-3 minutes, or until the edges begin to lift and the bottom is golden brown. Drizzle a little oil around the edges to prevent sticking and promote crispiness.
  • Carefully flip the dosa and cook the other side for another 1-2 minutes, until lightly browned and crispy.
  • Remove from the pan and serve immediately.
