Ingredients
For the Idiyappam
- 1 3/4 cup Pearl Millet Flour also known as bajra or bajari flour
- 2 tbsp Ghee clarified butter
- 1/2 tsp Salt or to taste
- 1 1/4 cup Water approximately, adjust as needed for dough consistency
For the Sweet Coconut Milk
- 1 1/2 cup Coconut Milk warm
- 1/2 cup Jaggery grated; adjust to your preferred sweetness
- 1/4 tsp Nutmeg ground
- 1/2 tsp Cardamom Powder
- 1 Idiyappam Maker or string hopper press
- Ghee for greasing the idli plates, as needed
- 1 Steamer Or Idli Cooker
Instructions
Prepare the Sweet Coconut Milk
- Take warm coconut milk in a bowl. Add grated jaggery and mix until dissolved.
- Stir in ground nutmeg and cardamom powder. Strain the mixture through a fine-mesh sieve for a smooth consistency.
- Set aside.
Make the Idiyappam Dough
- Bring water to a boil in a saucepan. Add salt and ghee.
- Gradually add the pearl millet flour, stirring constantly to prevent lumps. Cook over low heat.
- Continue stirring vigorously until a smooth, pliable dough forms. If too sticky, add a little more flour. If too dry, add a teaspoon of water at a time.
- Remove from heat and cover the pan for 15 minutes to allow the dough to rest.
- Lightly wet your hands with water and knead the dough until it becomes soft and smooth. Cover with a damp cloth.
Shape and Steam the Idiyappam
- Lightly grease your idli plates or steamer basket.
- Take small portions of dough and shape into a log.
- Using an Idiyappam press, gently press the dough onto the greased plates to create the string hoppers.
- Steam the Idiyappam for 5-8 minutes, or until cooked through. Add 3-4 minutes if using an Idli cooker.
- Remove from the steamer and let it rest for a few seconds before carefully transferring to a serving plate.
- Serve hot with the prepared sweet coconut milk or your favorite savory curry.
