Instructions

Prepare the Sweet Coconut Milk

  • Take warm coconut milk in a bowl. Add grated jaggery and mix until dissolved.
  • Stir in ground nutmeg and cardamom powder. Strain the mixture through a fine-mesh sieve for a smooth consistency.
  • Set aside.

Make the Idiyappam Dough

  • Bring water to a boil in a saucepan. Add salt and ghee.
  • Gradually add the pearl millet flour, stirring constantly to prevent lumps. Cook over low heat.
  • Continue stirring vigorously until a smooth, pliable dough forms. If too sticky, add a little more flour. If too dry, add a teaspoon of water at a time.
  • Remove from heat and cover the pan for 15 minutes to allow the dough to rest.
  • Lightly wet your hands with water and knead the dough until it becomes soft and smooth. Cover with a damp cloth.

Shape and Steam the Idiyappam

  • Lightly grease your idli plates or steamer basket.
  • Take small portions of dough and shape into a log.
  • Using an Idiyappam press, gently press the dough onto the greased plates to create the string hoppers.
  • Steam the Idiyappam for 5-8 minutes, or until cooked through. Add 3-4 minutes if using an Idli cooker.
  • Remove from the steamer and let it rest for a few seconds before carefully transferring to a serving plate.
  • Serve hot with the prepared sweet coconut milk or your favorite savory curry.

Recipe Notes

Expert Tips for Perfect Idiyappam:

  • For a finer texture, use a finer grade of pearl millet flour.
  • Don't over-knead the dough, as this can make the Idiyappam tough.
  • If your Idiyappam sticks to the plates, ensure they are well-greased.
  • Experiment with different toppings! Try adding chopped nuts or raisins to the sweet coconut milk for extra flavor and texture.
