Ingredients
For the Dough
- 1 cup Pearl Millet Flour bajra atta
- 1 cup Whole Wheat Flour atta, whole
- ½ cup Sorghum Flour jowar atta
- 1 cup Bottle Gourd lauki, grated
- ¼ cup Onion finely chopped
- ½ cup Flattened Rice poha, soaked for 10 minutes, then drained
- ½ cup Coriander finely chopped, fresh
- 1 tsp Chili Paste adjust to taste, green
- 1 tsp Chili Powder adjust to taste, red
- ½ tsp Garam Masala
- ½ tsp Coriander Powder
- ¼ tsp Asafoetida hing
- ½ tsp Salt or to taste
- 2 tsp Oil for the dough
- Water as needed for kneading
For Cooking
- ¼ cup Sesame Seeds til
- ¼ cup Oil for cooking
Instructions
- In a large mixing bowl, combine the pearl millet flour, whole wheat flour, and sorghum flour.
- Add the grated bottle gourd, chopped onion, green chili paste, red chili powder, garam masala, coriander powder, asafoetida, and chopped coriander leaves to the flour mixture.
- Add the oil and soaked, drained flattened rice. Mix well to combine all the ingredients.
- Add salt and gradually incorporate water while kneading until a soft, pliable dough forms. Kneading develops gluten, which gives the thalipeeth a better texture.
- Cover the dough and let it rest for 30 minutes. This allows the flavors to meld and the dough to relax, making it easier to roll.
- Heat a flat griddle or tawa over medium heat. Add oil and sesame seeds. The sesame seeds add a nutty flavor and pleasant crunch.
- Take a small portion of the dough and, using your hands, pat and shape it into a 5-inch circle directly on the hot tawa. Alternatively, you can roll it out on a lightly floured surface before transferring it to the tawa.
- If the dough sticks to your hands while shaping, lightly moisten them with water.
- Drizzle a little oil over the thalipeeth. This helps it cook evenly and adds a nice crispness.
- Cover the tawa and cook for about 5 minutes over low heat, or until the bottom is golden brown.
- Flip the thalipeeth and cook uncovered for another 5 minutes, or until the other side is also golden brown and cooked through.
- Repeat the process with the remaining dough.
- Serve the hot Bajra Lauki Thalipeeth with curd, raita, or pickle.
