Instructions

Prepare the Batter

  • Combine bajra flour, dill, salt, red chili powder, carom seeds, cumin seeds, 1 tablespoon sesame seeds, asafoetida, chopped onion, ginger-garlic paste, and yogurt in a large bowl. Gradually add water, mixing until a smooth, slightly thick batter forms.

Rest the Batter

  • Let the batter rest for at least 5 minutes to allow the flavors to meld.

Cook the Pancakes

  • Heat a non-stick pan or griddle over medium heat. Lightly grease the pan with oil.

Sesame Seed Base

  • Sprinkle a small amount of the reserved sesame seeds onto the hot pan.

Cook Each Pancake

  • Pour 1/4 cup of batter onto the hot pan for each pancake. Cook for 2-3 minutes per side, or until golden brown and crispy. Flip carefully when bubbles start to appear on the surface.

Serve

  • Serve the crispy bajra pancakes immediately with your favorite accompaniments, such as chutney, yogurt, or a side salad.

Recipe Notes

Expert Tips for Perfect Bajra Pancakes:

  • For extra flavor, toast the bajra flour in a dry pan before adding it to the batter.
  • Adjust the amount of red chili powder to your preferred spice level.
  • If the batter is too thick, add a little more water; if it's too thin, add a little more flour.
  • Don't overcrowd the pan when cooking the pancakes; cook them in batches to ensure even browning.
