- Add a few drops of oil to the water and bring it to a boil. In a separate bowl, gradually add the boiling water to the rice flour, mixing continuously to avoid lumps. Be cautious as the water will be hot. The amount of water needed might vary depending on the type of rice flour. Knead the dough until it becomes smooth and pliable. Let the dough rest for 10 minutes.
Prepare the Idiyappam Maker
- Lightly oil your hands and the Idiyappam maker (or string hopper press). Take a portion of the dough and roll it into a cylindrical shape that fits snugly into the mold.
Press the Dough
- Insert the dough cylinder into the Idiyappam maker. Press firmly to extrude the dough through the holes onto a lightly oiled plate or steamer tray. Spread some shredded coconut over the extruded dough. Repeat this process until you have created the desired number of Idiyappam strings.
Steam the Idiyappam
- Heat water in an idli steamer or a large pot with a steamer basket. Lightly oil the steamer plates. Place the prepared Idiyappam plates into the steamer. Steam for 5-7 minutes, or until cooked through. The cooking time may depend on the thickness of the Idiyappam strings and the size of your steamer.
