Ingredients
For the Dough
- 1 cup All-Purpose Flour or maida
- 1 cup Whole Wheat Flour atta, whole
- 1 tbsp Oil
- 1 tsp Salt
- 3/4 - 1 cup Water add gradually until a soft dough forms
For the Filling
- 1 cup Carrot finely chopped
- 1 cup Cabbage finely chopped
- 1/2 cup Bell Peppers finely chopped
- 1/2 cup Corn boiled, sweet
- 2 tsp Chili finely chopped, green, or to taste
- 1/2 cup Mozzarella Cheese grated
- 1 tbsp Chaat Masala
- 1 tbsp Garam Masala
- 1.5 tsp Salt to taste
- 2 tbsp Oil for cooking the filling
For Serving
- 1.5 leaves Lettuce
- 2 tbsp Tomato Sauce
- 4 tbsp Mayonnaise
- 1 tbsp Chili Sauce green, optional
Instructions
Prepare the Dough
- Combine all-purpose flour, whole wheat flour, oil, and salt in a bowl. Gradually add water, kneading until a soft, pliable dough forms. Cover with a damp cloth and let rest for at least 30 minutes.
Make the Filling
- Heat oil in a pan. Add finely chopped green chilies, carrots, cabbage, and bell pepper. Sauté until vegetables soften.
- Add boiled sweet corn, garam masala, chaat masala, and salt. Cook for another 2-3 minutes. Remove from heat and set aside.
Assemble the Frankie Rolls
- Divide the dough into 6-8 equal portions. Roll each portion into a thin, circular roti.
- Heat a lightly oiled griddle or tawa. Cook the rotis on both sides until lightly browned and cooked through.
- Spread lettuce leaves on each roti. Add 3-4 tablespoons of the prepared filling. Top with tomato sauce, mayonnaise, and grated mozzarella cheese.
- Carefully roll up each roti tightly. Secure with a toothpick to prevent it from unrolling.
- Serve immediately with green chili sauce, if desired.
