Instructions

Prepare the Dough

  • Combine all-purpose flour, whole wheat flour, oil, and salt in a bowl. Gradually add water, kneading until a soft, pliable dough forms. Cover with a damp cloth and let rest for at least 30 minutes.

Make the Filling

  • Heat oil in a pan. Add finely chopped green chilies, carrots, cabbage, and bell pepper. Sauté until vegetables soften.
  • Add boiled sweet corn, garam masala, chaat masala, and salt. Cook for another 2-3 minutes. Remove from heat and set aside.

Assemble the Frankie Rolls

  • Divide the dough into 6-8 equal portions. Roll each portion into a thin, circular roti.
  • Heat a lightly oiled griddle or tawa. Cook the rotis on both sides until lightly browned and cooked through.
  • Spread lettuce leaves on each roti. Add 3-4 tablespoons of the prepared filling. Top with tomato sauce, mayonnaise, and grated mozzarella cheese.
  • Carefully roll up each roti tightly. Secure with a toothpick to prevent it from unrolling.
  • Serve immediately with green chili sauce, if desired.

Recipe Notes

Expert Tips for Perfect Frankie Rolls

  • For extra flavor, marinate the vegetables in a little bit of ginger-garlic paste before cooking.
  • If you prefer a spicier roll, add more green chilies to the filling.
  • Feel free to experiment with other vegetables like mushrooms, onions, or spinach in the filling.
  • To make the rolls ahead of time, prepare the dough and filling, then assemble and roll just before serving. You can also gently warm the rolls before serving.
