- 2 Tbsp Moringa Masala
- 1/2 tsp Salt pink

- 2 Tbsp Sesame Seed Oil
Instructions
- Boil the potato until tender. Drain and mash thoroughly. Set aside. Boil the beetroot until tender. Drain and mash. Set aside.
- Heat the sesame seed oil in a pan over medium heat. Add the ginger paste and chopped green beans. Sauté for about a minute until fragrant.
- Add the mashed beetroot, crushed chana, and green chilies (if using) to the pan. Stir well to combine. Sprinkle with moringa masala and pink salt. Sauté for another minute until heated through.
- Divide the mashed potatoes into equal portions. Shape each portion into a shallow patty or bowl shape. This creates a well for the other ingredients.
- Shallow fry the potato patties in a lightly oiled pan over medium heat until golden brown and slightly crispy. This adds a delicious textural element.
- Top each fried potato patty with a generous dollop of hung curd. Drizzle with tamarind sauce. Sprinkle with additional moringa masala for extra flavor.
