Ingredients
For the Dough
- 1 cup All-Purpose Flour maida
- 1 1/2 tsp Salt or to taste
- 1/2 cup Water or as needed
For the Egg Filling
- 4 Large Eggs
- 1/4 tsp Pepper black
For the Filling and Assembly
- 1 Onion finely chopped, medium
- 2 Chilies finely chopped, green
- 1/4 cup Coriander dhania, chopped, fresh
- 2 tbsp Vegetable Oil
Instructions
- In a large bowl, combine the all-purpose flour and salt.
- Gradually add water, mixing until a soft dough forms. Knead for 2-3 minutes until smooth and elastic.
- Cover the dough and let it rest for 15 minutes. This allows the gluten to relax, resulting in softer flatbreads.
- Divide the dough into 4 equal portions. Roll each portion into a smooth ball.
- On a lightly floured surface, roll out each dough ball into a thin, approximately 6-inch circle.
- Heat a large skillet or griddle over medium heat. Cook each flatbread for 1-2 minutes per side, or until lightly golden brown. This creates the signature flaky texture of the egg roll.
- In a bowl, whisk together one egg, salt, and pepper.
- Heat 1/2 tablespoon of oil in the same skillet. Pour in the egg mixture and cook until it begins to set.
- Place one flatbread on top of the cooking egg and press gently. This helps the flatbread adhere to the egg.
- Flip the egg and flatbread over and cook for another minute. This ensures the egg is cooked through and the flatbread is heated.
- Place the chopped onion, green chilies, and cilantro on top of the egg. Fold the sides of the flatbread inwards to create a roll.
- Repeat the process for the remaining eggs and flatbreads. Serve the Kolkata Egg Rolls immediately while hot and enjoy!
Recipe Notes
Good To Know
- For an extra-crispy paratha, cook it on a hot tawa with a generous brushing of ghee, flipping multiple times until golden and layered.
- To infuse more flavor, lightly pickle thinly sliced onions with a splash of vinegar, a pinch of salt, and a dash of red chili powder—add these inside the roll for a tangy crunch.
- If you prefer a vegetarian version, substitute eggs with crumbled paneer tossed in black pepper, green chillies, and coriander, then sauté briefly before wrapping.
- Wrap finished egg rolls in parchment or butter paper for an authentic street-food feel and to help keep them warm and less messy if serving on the go.
Expert Tips
- Experiment with different fillings like spiced potatoes, shredded chicken, or minced lamb for variety.
- Serve the paratha rolls with a side of chutney or raita for dipping and added flavor.
- For a quicker meal, use store-bought parathas, but ensure they are fresh and soft.
Storage Instructions
- Store leftover paratha rolls in an airtight container in the refrigerator for up to 2 days. Reheat in a pan or microwave before serving.
