Instructions

Prepare the Moong Dal

  • Clean, wash, and boil 1/2 cup yellow moong dal in 1 cup water until soft and cooked. All water should evaporate.

Blend the Dal

  • Drain the cooked dal and blend it in a mixer to a coarse paste.

Make the Tikki Mixture

  • Transfer the dal paste to a bowl. Add yogurt, gram flour, green chili, chaat masala, chili powder, garam masala, turmeric powder, ginger-garlic paste, coriander, onion, and salt. Mix thoroughly. Reserve some oats for coating.

Shape and Coat the Tikkis

  • Divide the mixture into 12 equal portions. Shape each portion into a small, oblong patty. Coat each patty with the reserved oats.

Cook the Tikkis

  • Lightly grease a non-stick pan with 1 tablespoon of oil. Cook the tikkis in the pan over medium heat, using minimal oil, until golden brown and cooked through.

Prepare the Frankie Masala

  • In a small bowl, combine amchur powder, chili powder, white pepper powder, and salt.

Assemble the Frankie

  • Sprinkle the frankie masala over the cooked tikkis. To assemble, place a tikki on a roti/tortilla wrap. Add some minced onion and coriander. Roll up tightly. Serve immediately with chilli garlic sauce.

Recipe Notes

Expert Tips

  • For extra flavor, soak the moong dal for 30 minutes before boiling.
  • Adjust the amount of spices according to your preference. If you prefer a milder taste, reduce the amount of chili powder.
  • If the tikki mixture is too wet, add a little more gram flour to thicken it.
  • For a crispier tikki, pan-fry them until golden brown on all sides.
