Ingredients
For the Egg Roll Filling
- 1 medium Onion finely sliced
- 1/2 cup Cucumber finely chopped
- 2 Chilies finely chopped, green
- 1 tbsp Kasundi Mustard or to taste
- 1/2 tsp Lemon Juice
- 1/4 tsp Salt black, or to taste
For the Roti
- 1 cup All-Purpose Flour maida
- 2 tbsp Vegetable Oil
- 1.5 tsp Salt or to taste
- 1/2 cup Water approximately, as needed for dough
- 2 tbsp Vegetable Oil for frying
Instructions
Prepare the Dough
- Combine all-purpose flour, salt, and vegetable oil in a bowl. Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth. Cover and let rest for 15 minutes.
Make the Egg Roll Filling
- In a bowl, combine the sliced onions, chopped cucumber, green chilies, Kasundi mustard, lemon juice, and black salt. Mix well and set aside.
Prepare the Rotis
- Divide the dough into small equal-sized balls. Roll each ball into a thin, round roti using a rolling pin. Heat a lightly oiled tawa (flat griddle) over medium heat. Cook the rotis for about 30 seconds per side, until lightly browned and cooked through. Set aside.
Cook the Eggs
- Whisk the eggs with a pinch of salt. Heat vegetable oil in a pan over medium heat. Pour in a small amount of the egg mixture, creating a thin layer. Cook until lightly set, then carefully place a cooked roti on top.
Assemble and Serve
- Spoon the egg roll filling onto the roti. Gently roll it up tightly. Serve immediately and enjoy!
