Ingredients
For the Fudge Base
- 1 cup Bittersweet Chocolate dark
- 1/2 cup Soy Milk
- 1/2 cup Milk
- 1/4 cup Coconut Milk
- 4 tbsp Cocoa Powder unsweetened
- 3 tbsp Sugar granulated
- 1 tbsp Corn Flour
- 3 tbsp Rice Flour
- 1 tsp Salt
- 1 tsp Vanilla Extract
Instructions
Prepare the Flour Slurry
- In a medium bowl, whisk together the cornstarch and rice flour. Gradually add water, whisking constantly until a smooth, thick slurry forms.
Heat the Milk Mixture
- In a medium saucepan, combine the soy milk, whole milk, and coconut milk. Heat over medium heat, stirring occasionally, until it comes to a gentle simmer.
Combine and Thicken
- Add the sugar and salt to the simmering milk mixture and stir to dissolve. Pour in the flour slurry, whisking vigorously to prevent lumps. Continue to stir constantly until the mixture thickens into a pudding-like consistency.
Incorporate Chocolate
- Remove the saucepan from the heat. Add the chopped bittersweet chocolate and cocoa powder. Stir continuously until the chocolate is completely melted and the mixture is smooth and glossy. Stir in vanilla extract.
Set and Garnish
- Pour the fudge mixture into a lightly greased 8x8 inch baking dish. Spread evenly and let it cool completely at room temperature. Once cooled, sprinkle with chopped walnuts.
Cut and Serve
- Once the fudge is firm, cut it into squares and serve. Enjoy!
Recipe Notes
Expert Tips for the Best Healthy Chocolate Fudge
- Use high-quality bittersweet chocolate for the best flavor. The higher the percentage of cacao, the more intense the chocolate flavor will be.
- For a richer fudge, add a tablespoon of unsalted butter to the mixture along with the chocolate.
- If you prefer a sweeter fudge, you can increase the amount of sugar to your liking. Start with an additional tablespoon and adjust as needed.
- Get creative with your garnish! Try chopped pecans, sea salt flakes, or dried cranberries for added texture and flavor.
