  • 1/8 cup Almonds ground, roasted

  • Soak the whole almonds in hot water for 1 hour to soften the skins for easy peeling.
  • Meanwhile, dry roast a handful of almonds until fragrant and lightly browned. Let them cool completely, then grind into a coarse powder. Measure out ⅛ cup of the almond powder and set aside.
  • After the soaking hour, peel the almonds and discard the skins. Grind the peeled almonds into a fine paste with 4-5 tablespoons of water.
  • In a heavy-bottomed pan, combine the almond paste, honey, and organic sugar.
  • Over low heat, melt the mixture, stirring constantly. Continue to cook until the mixture bubbles gently and reaches a soft-ball stage (a small amount dropped into cold water forms a soft ball). This should take about 4-5 minutes.
  • Add the butter and dark chocolate chips, followed by the vanilla extract. Stir gently to combine and remove the pan from the heat immediately. Leave the pan on the stovetop to retain heat.
  • After 2 minutes, remove the pan from the stovetop and whisk the mixture vigorously until it becomes glossy and all the chocolate chips have melted completely.
  • Let the mixture cool slightly. While it's still warm, whisk in the milk powder, followed by the ground roasted almonds.
  • Line a tray or dish with parchment paper. While the fudge is still lukewarm, transfer it to the prepared tray.
  • Spread the fudge evenly in the tray using a spatula. Sprinkle the desiccated coconut evenly over the top.
