Ingredients

- 1 tsp Baking Soda
- 150 gm Caster Sugar

- 2 Large Eggs room temperature
- 150 ml Milk
- 150 ml Olive Oil
- 2 tsp Vanilla Extract
- 400 gm Sweetened Milk 1 tin, condensed
Chocolate Frosting
- 125 gm Chocolate dark
Instructions
- Preheat oven to 180°C (160°C fan/gas mark 4). Grease and flour two round cake tins or line them with parchment paper. This ensures the cakes release easily after baking.
- In a large bowl, sift together the all-purpose flour, cocoa powder, baking soda, and caster sugar. Sifting aerates the dry ingredients, resulting in a lighter cake.
- In a separate bowl, whisk together the olive oil, milk, eggs (one at a time), vanilla extract, and 2 tablespoons of the sweetened condensed milk. Adding the eggs one at a time ensures they are fully incorporated into the batter.
- Gradually add the dry ingredients to the wet ingredients, mixing gently with a spatula or your hands in a folding motion until just combined. Be careful not to overmix, as this can lead to a tough cake.
- Divide the batter evenly between the prepared cake tins. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
