Ingredients
Produce
- 3 medium Potato chopped, sweet
- 1/2 cup Neem Leaves packed
- 1 Chili dried, red
Pantry
- 1 pinch Asafoetida hing
- 1/3 tsp Mustard Seeds
- 1/3 tsp Gram black
- 1 tbsp Bengal Gram Dal
- 1 tbsp Oil
- 1 1/2 tsp Salt or to taste
- 1 tbsp Peanut ground into a powder, roasted
Instructions
- Wash the neem leaves thoroughly and remove the stems. Pressure cook the sweet potatoes for 5 minutes, or until just tender. A shorter cooking time is better to prevent them from becoming mushy. Once cooked, drain the sweet potatoes, peel, and chop into bite-sized cubes.
- Heat the oil in a pan over medium heat. Add the mustard seeds and urad dal. Sauté for a minute until the mustard seeds pop and the dal turns golden brown. This blooming process releases the spices' aromas.
- Add the asafoetida, dried red chili, and bengal gram dal to the pan. Sauté for another minute until fragrant.
- Add the chopped sweet potatoes and salt to the pan. Stir well to coat the sweet potatoes with the spices. Sauté for 5-7 minutes, until the sweet potatoes are slightly browned and heated through.
- Add the neem leaves to the pan. Sauté for 3-4 minutes, or until the leaves wilt slightly and become a bit crispy. Be careful not to overcook them, as they can become bitter.
- Sprinkle the roasted peanut powder over the curry. Stir gently to combine. This adds a wonderful nutty flavor and a pleasant textural contrast.
- Serve the Sweet Potato and Neem Leaf Curry hot. It pairs beautifully with rice or roti.
Recipe Notes
Good To Know
- To reduce the bitterness of neem leaves while preserving their health benefits, lightly sauté them in a bit of oil until just crisp before adding them to the curry.
- If you prefer a richer texture, steam and roughly mash half the sweet potatoes before adding them back to the curry—this will help thicken the gravy and create a more cohesive bite.
- For a protein boost and added crunch, sprinkle roasted Bengal gram or chopped roasted peanuts over the curry just before serving.
- This curry pairs beautifully with steamed rice or milder flatbreads like phulkas, as their subtle flavors balance the robust tastes in the dish.
Expert Tips
- Adjust the spice level by adding more or fewer green chilies. Taste and adjust as you cook.
- For a smoother curry, use an immersion blender to partially blend the cooked vegetables before adding the coconut milk.
- Fresh curry leaves add a wonderful aroma. Add a few towards the end of cooking for the best flavor.
Storage Instructions
- Allow the curry to cool completely before storing.
- Transfer to an airtight container and refrigerate for up to 3 days.
- Reheat gently on the stovetop or in the microwave.
