Hashbrown eggs nest is a simple and great idea since these little nests can be made ahead. They are delicious, easy to make, and can be customized to your own tastes. You can not only use the recipe as a delicious grab-and-go breakfast, but serve it to kids nestled into some lovely cheese grits, alongside fresh fruits and French toast or into their tiffin box.

Ingredients
- 1/2 cup shredded potatoes hash browns
- 1/4 cup grated cheddar cheese
- 1 tbsp fresh ground pepper
- 1/2 teaspoon Salt
- 1 teaspoon olive oil
- 2 tbsp mashed potatoes
- 3 egg
- 2 tbsp chopped veggies mix of onions tomatoes or choice of veggies

Instructions
- Preheat oven to 210 °C
- Grease muffin cups.
- Divide the prepared mixture into muffin cups equally and use your fingers to shape potatoes into nests with hollows in the middle.
- Bake for 15 min or until nests are brown and cheese has melted.remove from oven.
- Add the boiled and mashed potatoes and chopped veggies in the hollows in each nests equally.
- Break an egg on top of the veggies.
- OR instead of above two steps you make mix eggs and veggies and put this mixture into the hollows of the hashbrown nests.
- Preheat oven to 180°C
- Bake again for 35 min or until the egg whites are set.
- Remove from oven and serve hot.
