As holi is around the corner and paneer contest is going platter share platform so I was thinking why not make a unique dish with paneer which should be something different and innovative. So I have made paneer nest gujiya with mawa/ khoya stuffing. It is a very delish snack, regular gujiya se ek dum hatke and delicious too.

Ingredients
- 150 gm paneer crumbled
- Sugar as per taste
- 3 tsp suji or rava
- 100 gm mawa or khoya, crumbled
- 4-5 almonds finely chopped
- 1/4 cup vermicelli
- 2 tsp corn flour
- Oil for frying
- 2 tsp clarified butter or ghee
- 3 tsp dry coconut powder

Instructions
- First mash the crumbled paneer with your palm until it becomes like a dough when you roll it.
- Now add sugar and 2 tsp rava to the paneer and mix it well. Make a dough with it. Keep this dough into the fridge for about 10 minutes.
- Now for stuffing take a pan add 2 tsp clarified butter / ghee, add chopped almonds and 1 tsp rava. Roast it well for about 2-3 minutes, now add crumbled khoya and coconut powder. Stir it well. Now add sugar according to your taste. Mix it well.
- Now take out paneer dough from fridge. Apply some oil or ghee on your palm. Take small portion of dough. Make ball shape with this then press it well with fingers for disc shape.
- Put stuffing at one side of the disc and close it well and give gujiya shape with hands.
- Repeat this process with remaining dough. And put these non fried gujiya into the fridge for about 10 minutes.
- Meanwhile take a corn flour and mix water into it and make a runny batter. In another plate take vermicelli. Now take out gujiya from fridge. Dip these gujiya into the corn flour batter and immediately roll it into the vermicelli .Deep fry it .
- Paneer nest gujiya is ready. Serve hot.
Recipe Notes
- I have put dough and gujiya into the fridge before frying it will help to get non sticky dough and gujiya and we will easily dip it in corn flour mixture.
- You can make non-fried gujiya before 1 day and keep it in fridge.
- When your guest are arriving take out from fridge and fry.
