Fruit Custard (Without Custard Powder & Milk)

This Fruit Custard is made with Sweetened Corn Milk. As readymade custard powder contains powdered milk , I replaced it with a mixture of corn milk and rice starch to make it more friendly to Lactose-Intolerants. It is an innovative procedure wherein the original flavour and appearance is not missed 🙂

Ingredients
  

  • Sweet Corn Milk – 2 cups
  • Rice Flour – 4 teaspoons
  • Water-as required
  • Sugar powder – 2 teaspoons
  • Fruits – As per your taste
  • Almond-For garnishing

Instructions
 

  • Grind the sweet corn seeds in a dry mixie jar. Separate the milk from the seed pulp by using a muslin cloth or strainer.
  • Transfer the corn milk into a saucepan and boil it over low to medium flame for 5 minutes or until the raw smell subsides.
  • In the meanwhile, take a bowl. Add rice flour. Now pour little by little water and mix well so that no lumps are formed.
  • Add the above mix, sugar powder to the boiling corn milk.Stir well and allow it to cook for 3 minutes to 4 minutes over a low flame.
  • Then switch off the flame. Keep it aside to attain room temperature.
  • Once it is cool, add slices of fruits,dry fruits as per your taste.
  • Tastes good when serve chilled.

Notes

To attain thick consistency,you can add more amount of rice flour and water mix.
