Ingredients
For the Soya Granules
- 1 cup Soya Granules
- 1 cup Water for soaking soya granules, lukewarm
For the Biryani
- 2 cup Basmati Rice
- 4 cup Water
- 4 tbsp Ghee
- 1 Large Onion chopped
- 1/2 cup Carrot sliced
- 2 Chillies green, slit lengthwise
- 1/2 tsp Ginger thinly sliced
- 2 tbsp Cashews
- Salt to taste
Spices
- 1 tsp Cumin Seeds
- 1/2 tsp Shahi Jeera
- 1 inch Cinnamon Stick
- 1 Star Anise
- 1 Bay Leaf
- 2 Cardamoms green
- 4 Cloves
- 6 Peppercorns black
- 2 pinch Nutmeg Powder
For Layering
- 1/2 cup Rose Petals for layering and garnish, fresh or dried
Instructions
- Soak the soya granules in lukewarm water for about 10 minutes to soften them. Drain thoroughly, squeezing out excess water.
- In a pressure cooker, heat the desi ghee over medium heat. Add the cumin seeds, shahi jeera, cinnamon stick, star anise, bay leaf, cardamom, cloves, black peppercorns, and nutmeg powder. Sauté until fragrant, about 1 minute. This blooming of spices releases their aromatic oils, enhancing the biryani's flavor.
- Add the chopped onions and slit green chilies to the pressure cooker. Sauté until the onions turn golden brown, about 5-7 minutes. Add the cashews and sauté for another minute until lightly toasted.
- Add the sliced carrots, soya granules, and sliced ginger to the pressure cooker. Sauté for 2-3 minutes until the carrots slightly soften.
- Pour in the water and add salt to taste. Bring the mixture to a gentle simmer.
- Rinse the basmati rice under cold water until the water runs clear. This removes excess starch, resulting in fluffy biryani.
- Add the rinsed rice to the pressure cooker. Stir gently to combine. Close the lid and cook on high pressure for one whistle. Reduce the heat to low and simmer for 2 minutes. Turn off the heat and allow the pressure to release naturally.
- If using fresh rose petals, gently rinse them under cold water. If using dried, no need to rinse.
- In a serving bowl, create a layer of rose petals. Top with a portion of the hot biryani. Repeat layers of rose petals and biryani, ending with a layer of rose petals.
- Drizzle some desi ghee over the top layer, allowing it to seep down the sides and infuse the biryani with extra richness. Cover the bowl and let it rest for 15 minutes to enhance the flavors and aromas.
- Serve the Fragrant Vegetarian Rose Biryani warm with raita for a complete and satisfying meal.
