Ingredients
For the Rice
- 1 cup Basmati Rice
For the Dal
- 1 cup Split Chickpea split chickpeas; soak for at least 4 hours or overnight
For the Aromatics & Spices
- 2 medium Onion sliced
- 2 Chili finely chopped, green
- 1 tsp Ginger Garlic Paste
- 1 tsp Chili Powder adjust to taste, red
- 1/4 tsp Cardamom Powder ground cardamom
- 1/2 cup Coriander dhania, chopped
- 1/4 cup Mint Leaves chopped
- 1/2 cup Yogurt plain
- 2 tbsp Refined Oil or ghee (clarified butter)
- Salt to taste
Optional Garnish
- Coriander Sprigs for garnish, fresh
Instructions
Prepare the Chana Dal
- Boil the soaked chana dal until tender. Drain well, reserving the cooking liquid. Set aside.
Sauté Aromatics
- Heat oil or ghee in a pressure cooker or heavy-bottomed pot. Add sliced onions and green chilies; sauté until golden brown.
Add Spices and Yogurt
- Stir in ginger-garlic paste and sauté briefly. Add the yogurt, red chili powder, and cardamom powder. Mix well and cook for a minute or two until fragrant.
Combine Dal and Herbs
- Add the cooked chana dal, half of the chopped coriander and mint leaves. Mix gently to combine.
Prepare the Rice
- Wash the basmati rice thoroughly until the water runs clear. Parboil the rice until about half-cooked; drain well.
Layer and Cook
- Layer the parboiled rice over the chana dal mixture. Sprinkle the remaining coriander and mint leaves on top. Add a splash of the reserved chana dal cooking water if needed.
Seal and Simmer
- Close the lid of the pressure cooker (or cover tightly with foil if using a pot). Cook over low heat for 15-20 minutes, or until the rice is fully cooked and the flavors have melded.
