Ingredients
Rice
- 2 cup Basmati Rice
Vegetables
- 1 cup Cottage Cheese cubed
- 1 cup Vegetables french beans, potato, and cauliflower, carrot, chopped, mixed
- 150 gm Peas green
Aromatics and Spices
- 3 Onions thinly sliced
- 2 Chillies finely sliced, green
- 1 tsp Ginger-Garlic Paste
- 1 tsp Chili Powder red
- 3 Cinnamon Sticks
- 4.5 Cloves
- 1/2 tsp Pepper black
- 1 tsp Cumin Seeds
- Salt to taste
Other
- 1 1/2 cup Yogurt
- 4 Tbsp Vegetable Oil
- 1/4 cup Cashews
- 1/4 cup Mint chopped, fresh
- 1/4 cup Coriander chopped, fresh
Instructions
- Prepare the vegetables and paneer. Chop the paneer into bite-sized cubes. Chop all the vegetables into uniform pieces. Thinly slice the onions and fry them in 2 tablespoons of oil until golden brown and crispy. Set the fried onions aside.
- In a large pot or Dutch oven, heat the remaining 2 tablespoons of oil over medium heat. Add the cinnamon sticks, cloves, and black pepper. Sauté for about a minute until fragrant. Be careful not to burn the spices.
- Add the cumin seeds and sauté for a few seconds until they begin to pop.
- Add the ginger-garlic paste and sauté for 1-2 minutes until the raw smell disappears.
- Add the potatoes and sauté for 3-5 minutes until they start to soften.
- Add the remaining vegetables (carrots, French beans, cauliflower, and green peas) and sauté for 2-3 minutes until they are slightly tender.
- Add the turmeric powder, salt, and red chili powder. Sauté for 2-3 minutes until the spices are fragrant.
- Add 1 cup of the yogurt to the vegetables and mix well. Reserve the remaining 1/2 cup of yogurt for later.
- In a separate large pot, bring 5 cups of water to a boil. Add salt, cumin seeds, and a tablespoon of oil to the boiling water. This helps to prevent the rice grains from sticking together.
- Add the basmati rice to the boiling water and cook until it is about 3/4 cooked through. The rice should still have a slight bite to it. Drain the excess water and set the rice aside.
- In a large, heavy-bottomed pot or a biryani pot, spread half of the cooked vegetables evenly over the bottom.
- Layer half of the par-cooked rice over the vegetables. Sprinkle some of the fried onions over the rice. Repeat the layers with the remaining vegetables, rice, and fried onions. This layering technique creates a beautiful presentation and infuses the rice with the flavors of the vegetables and spices.
- Sprinkle the cashews, chopped mint, and cilantro over the top layer.
- Pour the reserved 1/2 cup of yogurt over the top layer. Cover the pot tightly with a lid. You can also seal the lid with dough to create a tighter seal and prevent steam from escaping.
- Place the biryani pot on a preheated tawa or griddle over medium heat. Cook for 5-10 minutes, then reduce the heat to low and cook for another 10-15 minutes. This slow cooking method allows the flavors to meld together and the rice to cook to perfection.
