Ingredients
For the Rice
- 1 cup Basmati Rice
- 2 tsp Salt or as per taste
- 1/4 tsp Turmeric Powder
For the Spice Paste
- 2 tbsp Oil
- 1 tsp Cloves ground
- 1 tsp Cardamom ground
- 1 tsp Cinnamon ground
- 1/2 tsp Nutmeg ground
- 1 tbsp Chili Powder red
- 1 tbsp Ginger-Garlic Paste
- 1.5 cup Tomato Puree from about 5 fresh tomatoes
For the Vegetables
- 1 tbsp Oil
- 1 Bay Leaf
- 1 Onion finely chopped
- 1/2 cup Bell Peppers chopped, green
- 1/2 cup Peas green
- 1 tsp Cumin Seeds
- 1 tsp Pepper black, ground
- 2 tsp Salt or as per taste
For Layering and Garnish
- 1 cup Onions fried, golden brown and crispy
- 1/2 cup Yogurt thick
- 1 pinch Saffron dissolved in 5 tbsp milk
- 4 drops Kewra Essence optional
- 1 cup Coriander chopped, mixed with chopped mint and green chilies
- 1/2 cup Heavy Cream
Instructions
- Soak the basmati rice in water for 30 minutes. This helps the grains cook evenly and become fluffy. In a large pot, bring 1 liter of water to a rolling boil. Add the soaked rice, turmeric powder, and salt. Boil until the rice is about 3/4 cooked through; it should still have a slight bite. Drain the rice in a colander and rinse with cold water to stop the cooking process. Spread the rice on a tray to cool and reserve 1/2 cup for the top layer.
- Heat 2 tablespoons of oil in a pan over medium heat. Add the ground cloves, cardamom, cinnamon, nutmeg, red chili powder, and ginger-garlic paste. Sauté for a minute or two until fragrant. Add the tomato puree and stir well. Cook the mixture until it thickens and the oil starts to separate, indicating the flavors have melded.
- In another pan, heat the remaining 1 tablespoon of oil. Add the bay leaf and chopped onion. Sauté until the onion becomes translucent. Add the chopped green bell pepper and green peas. Sprinkle with cumin seeds, ground black pepper, and salt. Cover the pan and cook until the vegetables are about 3/4 cooked through; they should retain a slight crunch.
- Add the prepared spice paste to the vegetables and mix well. Remove the pan from the heat and let the mixture cool slightly. Once warm, stir in the heavy cream. Gently mix the cooked rice (except the reserved 1/2 cup) with the vegetable and spice mixture.
- In a small bowl, combine the saffron-infused milk with the thick yogurt. In an oven-safe casserole dish or a biryani handi, spread half of the rice and vegetable mixture as the first layer. Sprinkle with 1 tablespoon each of fried onions, the cilantro-mint-chili mixture, and the saffron yogurt. Add the remaining rice and vegetable mixture as the second layer. Repeat the sprinkling process with the remaining layering ingredients.
- Spread the reserved plain yellow rice over the top. Finish with the remaining saffron yogurt, cilantro-mint-chili mixture, and fried onions. If using kewra essence, sprinkle it evenly over the top. Cover the dish tightly with aluminum foil and then place the lid on top. This creates a sealed environment for even cooking. Preheat the oven to 325°F (160°C) for 15 minutes. Bake the biryani for 30-35 minutes, or until the rice and vegetables are fully cooked. For stovetop cooking, preheat a tawa for 10-15 minutes, then place the handi on the tawa and cook over low heat for 30-35 minutes.
- Let the biryani rest for 15-20 minutes after cooking. This allows the flavors to meld and the biryani to settle. Serve hot with raita or your favorite Mughlai gravy.
