Ingredients
For the Doda Barfi
- 4 cup Milk
- 1 1/2 cup Heavy Cream
- 1/2 cup Sugar adjust to your preferred sweetness, granulated
- 3 tbsp Cracked Wheat also known as fine bulgur, dalia
- 1 cup Cashews crushed
- 1 cup Almonds crushed
- 3 tbsp Ghee use good quality ghee for best flavor.
- 2 tsp Cocoa Powder for color and a hint of chocolate
- 2 tbsp Pistachios sliced, for garnish
Optional additions
- 1/4 tsp Cardamom Powder for enhanced aroma (optional)
Instructions
Roast the Dalia
- Roast the cracked wheat (dalia) in 2 tablespoons of ghee in a small pan over medium heat until it turns light brown. Set aside.
Reduce the Milk Mixture
- In a heavy-bottomed pan, combine the milk and heavy cream. Bring to a boil over medium-high heat, stirring occasionally to prevent sticking. Continue to boil, stirring frequently and scraping down the sides, until the mixture thickens significantly (approximately 40-45 minutes).
Incorporate Sugar and Dalia
- Add the sugar and roasted dalia to the thickened milk mixture. Stir well to combine.
Continue Cooking
- Continue cooking for another 20-25 minutes, stirring constantly and scraping the sides, until the mixture thickens further and starts to pull away from the sides of the pan.
Add Cocoa Powder and Nuts
- Stir in the cocoa powder. Add the remaining 1 tablespoon of ghee, along with the crushed cashews and almonds. Continue to stir.
Achieve the Right Consistency
- Keep stirring continuously until the mixture becomes a soft, pliable dough that leaves the sides of the pan and releases ghee. This takes about 15-20 minutes. The mixture will thicken considerably.
Shape and Garnish the Barfi
- Transfer the Doda mixture to a lightly greased 12-inch plate or baking dish. Spread it evenly to a thickness of about 1/2 inch. Sprinkle the sliced pistachios over the top and gently press them in.
Cool and Cut
- Let the Doda Barfi cool completely before cutting into 1-inch squares. Once cooled, cut into squares while still slightly warm, for easy cutting.
