Prepare the Spice Paste

  • Dry roast coriander seeds, groundnuts, desiccated coconut, and curry leaves until fragrant. Allow to cool slightly, then grind into a smooth paste with coriander leaves and green chili using a blender or mortar and pestle.

Prepare the Vegetable Paste

  • Blend the tomatoes and onion into a smooth paste.

Prepare the Sponge Gourd

  • Peel the sponge gourd and cut it into 1-inch cubes. In a bowl, combine the cubed sponge gourd with turmeric powder, chili powder, gram flour, and salt. Mix well and let it marinate for 10 minutes.

Shallow Fry the Sponge Gourd

  • Heat a little mustard oil in a pan or tawa over medium heat. Shallow fry the marinated sponge gourd until lightly browned on all sides.

Cook the Curry

  • Heat mustard oil in a pan or pot. Add cumin seeds and let them splutter. Add the tomato-onion paste and sauté for a few minutes until softened.

Combine and Simmer

  • Stir in the prepared spice paste and cook for a minute or two, until fragrant. Add the shallow-fried sponge gourd, mix well, and cover the pan. Let it simmer for 5-7 minutes, or until the sponge gourd is tender and the flavors have melded.

Serve

  • Serve hot with rice, roti, or chapati.
