Ingredients
- 250 gm Sponge Gourd
- 2 Tomato medium size
- 1 Onion
- 1 tbsp Coriander Seeds
- 1 tbsp Nuts ground
- 1 tbsp Coconut dry
- 1 tsp Coriander
- 1 tsp Cumin Seed
- 1 tsp Chilli Powder
- 1 tbsp Mustard Oil
- 2 tbsp Flour
- 1 Chilli green
- 5-6 Curry Leaves leaves
- 1/2 cup Coriander leaves
- 1-2 tsp Salt or as per taste
Instructions
Prepare the Spice Paste
- Dry roast coriander seeds, groundnuts, desiccated coconut, and curry leaves until fragrant. Allow to cool slightly, then grind into a smooth paste with coriander leaves and green chili using a blender or mortar and pestle.
Prepare the Vegetable Paste
- Blend the tomatoes and onion into a smooth paste.
Prepare the Sponge Gourd
- Peel the sponge gourd and cut it into 1-inch cubes. In a bowl, combine the cubed sponge gourd with turmeric powder, chili powder, gram flour, and salt. Mix well and let it marinate for 10 minutes.
Shallow Fry the Sponge Gourd
- Heat a little mustard oil in a pan or tawa over medium heat. Shallow fry the marinated sponge gourd until lightly browned on all sides.
Cook the Curry
- Heat mustard oil in a pan or pot. Add cumin seeds and let them splutter. Add the tomato-onion paste and sauté for a few minutes until softened.
Combine and Simmer
- Stir in the prepared spice paste and cook for a minute or two, until fragrant. Add the shallow-fried sponge gourd, mix well, and cover the pan. Let it simmer for 5-7 minutes, or until the sponge gourd is tender and the flavors have melded.
Serve
- Serve hot with rice, roti, or chapati.
