Prepare the Bottle Gourd

  • Peel, wash, and grate the bottle gourd. Boil it with 1 cup of water for 5 minutes, then drain excess water and set aside.

Sauté Aromatics

  • Heat ghee in a pan. Sauté the ginger and onion until softened.

Combine Ingredients

  • Add the grated bottle gourd, mashed potatoes, black pepper, cloves, cinnamon, nutmeg, sugar, salt, and green chilies to the pan. Stir continuously for 2 minutes until well combined. Add the flour and cook for another 2-3 minutes.

Finish the Mixture

  • Stir in the mawa (khoya) and lemon juice. Remove from heat.

Shape the Kebabs

  • Divide the mixture into equal portions. Using skewers, carefully shape the mixture onto them.

Fry the Kebabs

  • Heat vegetable oil in a non-stick pan. Place the kebabs in the pan and shallow fry, turning occasionally, until golden brown and heated through.

Serve

  • Serve hot with your favorite chutney.
