Ingredients
For the Kebabs
- 1 kg Bottle Gourd lauki, peeled, and grated, washed
- 2 medium Potatoes boiled and mashed
- 1 tsp Salt or to taste
- 2 tbsp All-Purpose Flour
- 1 tsp Pepper ground, black
- 1.5 tsp Chili Powder adjust to your spice preference, red
- 1 tbsp Chili finely chopped, green
- 1 tbsp Ginger finely chopped
- 1 tbsp Coriander finely chopped
- 1/4 tsp Cloves ground
- 1/4 tsp Cinnamon ground
- 1/4 tsp Nutmeg ground
- 2 tbsp Lemon Juice
- 1/2 medium Onion finely chopped
- 1 tsp Sugar
- 2 tbsp Mawa clarified butter solids, khoya
- 2 tbsp Ghee
For Frying
- Vegetable Oil for shallow frying
Instructions
Prepare the Bottle Gourd
- Peel, wash, and grate the bottle gourd. Boil it with 1 cup of water for 5 minutes, then drain excess water and set aside.
Sauté Aromatics
- Heat ghee in a pan. Sauté the ginger and onion until softened.
Combine Ingredients
- Add the grated bottle gourd, mashed potatoes, black pepper, cloves, cinnamon, nutmeg, sugar, salt, and green chilies to the pan. Stir continuously for 2 minutes until well combined. Add the flour and cook for another 2-3 minutes.
Finish the Mixture
- Stir in the mawa (khoya) and lemon juice. Remove from heat.
Shape the Kebabs
- Divide the mixture into equal portions. Using skewers, carefully shape the mixture onto them.
Fry the Kebabs
- Heat vegetable oil in a non-stick pan. Place the kebabs in the pan and shallow fry, turning occasionally, until golden brown and heated through.
Serve
- Serve hot with your favorite chutney.
