Ingredients
Produce
- 250 gm Ridge Gourd turai
- 1 Tomato chopped
- 1 Onion chopped
- 2 Chillies chopped, green
- 1 bunch Coriander
Spices and Flavorings
- 1 tsp Ginger chopped
- 1 tsp Garlic chopped
- 2 tbsp Poppy Seeds
- 2 tbsp Mustard Seeds
- 1 1/2 tsp Salt or to taste
Oil
- 1 tbsp Mustard Oil
Instructions
- Wash and chop the ridge gourd. Boil the ridge gourd until tender, then set aside.
- In a food processor or mortar and pestle, combine the green chilies, poppy seeds, mustard seeds, and cilantro to form a smooth paste.
- Heat the mustard oil in a pan over medium heat. Add the chopped onion and garlic. Sauté until the onions are translucent and fragrant.
- Add the chopped tomatoes and green chilies to the pan. Cook until the tomatoes soften slightly.
- Add the boiled ridge gourd and the prepared spice paste to the pan. Season with salt.
- Cover the pan and cook for 5-7 minutes, allowing the flavors to meld. Covering the pan traps steam and ensures the ridge gourd cooks through evenly.
- Serve hot with steamed rice or chapati.
Recipe Notes
Good To Know
- To enhance the nutty flavor, lightly toast the poppy and mustard seeds in mustard oil before adding onions and garlic; this will release their essential oils and deepen the curry’s aroma.
- If you prefer a thicker gravy, mash a few pieces of cooked sponge gourd towards the end of cooking—this adds body without needing extra thickeners.
- For a punchier tang, try adding a few drops of raw mustard oil at the end, just before serving, and garnish with chopped fresh coriander for an authentic Bengali touch.
- If you’d like a milder, less pungent version, soak the mustard seeds in warm water for 10 minutes before grinding—this helps reduce bitterness while still preserving their flavor.
Expert Tips
- For a richer flavor, consider using a combination of mustard oil and ghee (clarified butter) for cooking.
- Adjust the amount of green chilies according to your spice preference. Start with fewer and add more to taste.
- Freshly grated ginger and garlic will provide the best flavor for this dish.
Storage Instructions
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
