Ingredients
For the Sattu Filling:
- 150 gm Gram Flour roasted, roasted and ground gram flour. you can usually find this in indian grocery stores., sattu
- 100 gm Celery finely chopped
- 0.5 tsp Nigella Seeds nigella seeds
- 2 Garlic minced cloves
- 1 tbsp Ginger finely grated or minced
- 2 Chili Peppers finely chopped (adjust to your spice preference), green
- 1/2 cup Coriander finely chopped
- 2 tbsp Mustard Oil
- 2 tbsp Lemon Juice
- 1 tsp Salt for both filling and dough, to taste
For the Paratha Dough:
- 300 gm Wheat Flour all-purpose flour can be substituted, atta, but atta gives a better flavor and texture., whole
- 150-175 ml Water add gradually until a soft, pliable dough is formed.
Instructions
Prepare the Sattu Filling
- Combine roasted gram flour, chopped celery, kalonji, minced garlic, grated ginger, chopped green chilies, chopped coriander, mustard oil, and lemon juice in a bowl. Mix well and season with salt to taste.
Make the Dough
- In a large bowl, combine wheat flour and salt. Gradually add water, mixing until a soft, pliable dough forms. Knead the dough for 5-7 minutes until smooth and elastic.
Assemble and Cook the Parathas
- Divide the dough into 6 equal portions. Roll each portion into a thin circle. Place 2-3 tablespoons of the sattu filling in the center of each circle.
- Fold the dough over the filling to form a half-moon shape, and gently press the edges to seal. Flatten each half-moon into a thin paratha using a rolling pin.
- Heat a griddle or flat pan over medium heat. Cook the parathas on both sides until golden brown and cooked through, brushing with a little ghee or oil as needed.
Serve
- Serve the hot Sattu Parathas with your favorite accompaniments such as yogurt, pickle, or a dollop of ghee.

- For a richer flavor, toast the gram flour (sattu) in a dry pan before making the filling.
