  • 1/2 cup Cheese any cheese of your choice, grated

Prepare the Doughs

  • Make the green dough by combining wheat flour, pea puree, red chili powder, turmeric powder, chaat masala, black pepper powder, oil, and salt. Add water gradually to form a soft dough. Repeat the same process for the red dough, substituting pea puree with tomato puree.

Make the Filling

  • Heat oil in a pan. Add cumin seeds and let them splutter. Add chopped spring onions and sauté until softened. Add chopped tomatoes and sauté for a few minutes. Add mashed potatoes, peas, coriander powder, garam masala, chaat masala, black pepper powder, and salt. Mix well and cook until heated through.

Make the Rotis

  • Take small balls of green and red dough, combine them into one ball, and roll into a thin roti. Cook on a hot griddle until lightly browned on both sides. Repeat with the remaining dough.

Assemble the Paratha

  • Place one roti on a plate. Spread a generous amount of the vegetable filling evenly over the roti. Sprinkle with grated cheese and chaat masala. Top with another roti. Repeat this process to create a double-decker paratha.

Cook the Paratha

  • Heat a griddle or large skillet and add butter. Place the assembled paratha on the griddle. Cook for 1-2 minutes on each side, covering with a lid to allow the filling to heat through and the paratha to become soft and slightly crispy.

Serve

  • Serve hot with your favorite chutney or yogurt.
