Ingredients
For the Sattu Filling
- 2 cup Sattu roasted gram flour
- 1 Onion chopped
- 2 Tbsp Garlic grated
- 1 Tbsp Ginger grated
- 1/4 cup Coriander chopped
- 2 Chilies chopped, green
- 1 Tbsp Lemon Juice
- 1 tsp Salt or to taste
- 1/2 tsp Carom Seeds ajwain
- 1/2 tsp Nigella Seeds kalonji
- 2 tsp Chaat Masala
- 2 Tbsp Ghee or oil
- 2-3 Tbsp Water
For the Dough
- 4 cup Whole Wheat Flour whole
- 1-1 1/4 cup Water
Instructions
- In a mixing bowl, combine the sattu, chopped onion, grated garlic, grated ginger, chopped coriander, chopped green chilies, lemon juice, salt, carom seeds, nigella seeds, chaat masala, and ghee. Mix thoroughly.
- Gradually add water, a tablespoon at a time, until the mixture comes together and forms a cohesive filling that can be easily shaped. Don't add too much water, as it will make the filling runny.
- In a separate large bowl, add the whole wheat flour. Slowly add water while mixing with your hands until a firm, smooth dough forms. Knead for 5-7 minutes until the dough becomes elastic. This develops the gluten and results in softer parathas.
- Cover the dough with a damp cloth and let it rest for at least 15-20 minutes. This allows the gluten to relax, making the dough easier to roll.
- Divide the dough into lemon-sized balls. On a lightly floured surface, roll each ball into a thin circle, about 5-6 inches in diameter.
- Place a spoonful of the sattu filling in the center of each rolled-out circle.
- Bring the edges of the dough together to enclose the filling completely, forming a ball. Gently flatten the ball and roll it out again into a thin circle, ensuring the filling remains sealed inside.
- Heat a flat griddle or tawa over medium heat. Place a paratha on the hot tawa and cook for about a minute per side, or until small bubbles start to appear.
- Drizzle a little ghee or oil on the surface of the paratha and flip it over. Cook the other side until golden brown spots appear and the paratha is cooked through. Pressing gently with a spatula helps ensure even cooking.
- Serve the hot Sattu Parathas immediately with your favorite accompaniments.
