Ingredients
Dough
- 1 cup Whole Wheat Flour
Filling
- 1/4 cup Sattu Flour
- 1/4 cup Cabbage grated
- 1/4 cup Beetroot grated
- 1 tbsp Ginger grated
- 1 Chili finely chopped, green
- 2 tbsp Coriander chopped
- 1 tsp Garam Masala
- 1 1/2 tsp Salt or to taste

- 2 tbsp Sesame Oil
Instructions
- In a large bowl, combine the wheat flour and salt. Gradually add water and knead into a smooth, pliable dough. This builds gluten, which provides structure. Cover the dough and let it rest for at least 30 minutes. This allows the gluten to relax, making the dough easier to roll.
- Heat the sesame oil in a pan over medium heat. Add the grated cabbage, beetroot, and grated ginger. Sauté for 2-3 minutes until slightly softened.
- Add the chopped green chili, sattu flour, garam masala, and salt. Mix well and cook for another minute until fragrant. Remove from heat and stir in the chopped cilantro. Set aside to cool.
- Divide the dough into equal-sized balls. Roll each ball into a thin circle. Place a spoonful of the prepared filling in the center of each circle.
- Carefully bring the edges of the dough together to enclose the filling, pinching to seal tightly. Gently flatten the filled dough balls.
- Heat a flat griddle or tawa over medium heat. Cook each paratha for 2-3 minutes per side, or until golden brown spots appear and the filling is cooked through. Drizzle with a little more sesame oil while cooking for added flavor and crispness.
