Ingredients
For the Dough
- 1 cup Whole Wheat Flour whole
- 1.5 tsp Salt
- ¾ cup Water or as needed
For the Filling
- ¼ cup Sattu Flour (roasted black chana flour)
- 1 Onion finely chopped
- 1-2 Chilies finely chopped, green
- ¼ cup Coriander finely chopped
- 2 Tbsp Mint Chutney
For Cooking
- 2 Tbsp Ghee for cooking, or oil
Instructions
- In a large bowl, combine the whole wheat flour and salt.
- Gradually add water while mixing until a smooth and pliable dough forms. Knead for 2-3 minutes. This develops the gluten and makes the paratha soft.
- Cover the dough and let it rest for at least 15 minutes. This allows the gluten to relax, making it easier to roll out the parathas.
- Heat a pan over medium heat and add ghee or oil.
- Add the chopped onions and green chilies. Sauté until the onions are translucent, about 3-4 minutes.
- Add the sattu flour and salt. Stir continuously for 2-3 minutes until fragrant. Be careful not to burn the sattu.
- Remove from heat and stir in the mint chutney and chopped cilantro.
- Divide the dough into equal-sized balls. Roll each ball into a thin circle.
- Place a spoonful of the sattu filling in the center of each circle.
- Bring the edges of the dough together to enclose the filling completely. Seal tightly to prevent leakage.
- Roll the filled dough ball again into a thin paratha.
- Heat a flat griddle or tawa over medium heat. Cook the paratha for 2-3 minutes per side, or until golden brown spots appear and it's cooked through. Use a little more ghee or oil as needed.
- Serve the hot Sattu Paratha with yogurt or a side of your choice.
