Ingredients
 

For the Halwa

  • 1 Banana and sliced into small pieces, large, peeled, ripe
  • 2/3 cup Semolina fine semolina (sooji)
  • 1/2 cup Ghee
  • 1 cup Milk whole milk
  • 1 cup Water
  • 1/2 cup Sugar adjust to taste
  • 1/4 tsp Cardamom Powder elaichi
  • 1/4 tsp Saffron optional; or use saffron extract (a few drops)

Prepare the Milk Mixture

  • Heat 1 cup of milk and 1 cup of water in a saucepan over medium heat. Bring to a boil, then set aside.

Roast the Nuts

  • In a separate pan, heat 1 tablespoon of ghee. Add 1 tbsp chopped cashews and 1/2 tbsp raisins. Sauté over low heat until lightly golden. Remove from pan and set aside.

Toast the Semolina

  • In the same pan, add the remaining 1/4 cup ghee. Add 2/3 cup semolina and sauté over low heat until lightly golden, stirring frequently to prevent burning. This will take about 5-7 minutes.

Combine and Cook

  • Add the sliced bananas and 1/2 cup sugar to the pan with the toasted semolina. Mash the bananas slightly with a spoon as you stir to combine. Cook for 2-3 minutes, stirring often.

Add Milk Mixture and Simmer

  • Pour the boiling milk mixture into the pan. Stir well to combine. Cover the pan and cook for 2-3 minutes, or until the semolina is cooked through and the liquid is mostly absorbed.

Finish and Garnish

  • Remove the lid and stir continuously until the halwa thickens and pulls away from the sides of the pan. Stir in 1/4 tsp cardamom powder and the saffron (or extract). Add more sugar if needed.

Serve

  • Transfer the Banana Sooji Halwa to a serving bowl. Garnish with the reserved roasted cashews and raisins. Serve warm or at room temperature.
