Ingredients
Semolina and Liquid
Fats and Sweetener
- 1/2 cup Clarified Butter use good quality desi ghee for optimal flavor.
- 3/4 cup Sugar adjust to your desired sweetness., granulated
Optional Garnishes
- 1/4 cup Nuts almonds, cashews, chopped, etc., mixed, pistachios
- 1 teaspoon Cardamom Powder for added fragrance., optional
Instructions
Preparing the Ghee and Sugar
- Melt the desi ghee in a heavy-bottomed pan over medium heat. Once melted, add the sugar and stir continuously until the sugar dissolves completely and forms a light golden syrup.
Adding the Semolina and Milk
- In a separate bowl, soak the semolina in the milk for at least 10-15 minutes. This helps to prevent lumps. Add the soaked semolina mixture to the melted sugar and ghee. Stir continuously to prevent sticking and burning.
Cooking the Halwa
- Continue to stir the mixture for 5-8 minutes, or until the semolina is cooked through, golden brown and the halwa starts to pull away from the sides of the pan. If it becomes too thick, add a little more milk, a tablespoon at a time.
Finishing Touches
- Stir in the chopped nuts and cardamom powder (if using). Cook for another minute. Remove from heat and let the halwa cool slightly before serving. Garnish with extra nuts if desired.
