Prepare the Pomegranate

  • Shell the pomegranate and separate the seeds. Extract the juice, reserving about 1/4 cup of seeds for garnish.

Roast the Semolina

  • Heat the ghee in a non-stick pan over medium heat. Add the semolina and roast, stirring constantly, until it turns light golden brown. This takes about 5-7 minutes. Be careful not to burn it.

Add Water and Pomegranate Juice

  • Add the water to the roasted semolina and stir well. Cook for about 5 minutes, or until the water is completely absorbed and the semolina is soft.
  • Stir in the pomegranate juice and half of the reserved pomegranate seeds. Cook for another minute, stirring gently.

Sweeten and Finish

  • Add the sugar and cardamom powder (if using). Stir until the sugar dissolves and the halwa thickens slightly. Cook for another minute, or until desired consistency is reached.

Garnish and Serve

  • Remove from heat and transfer to a serving bowl. Garnish with the remaining pomegranate seeds and serve warm or at room temperature.
