For the Halwa

  • 1 cup Semolina fine semolina is recommended for a smoother texture., sooji
  • 1 cup Sugar
  • 4 cup Water
  • 1/4 tsp Food Coloring yellow food coloring; adjust to your preference
  • 1/4 cup Ghee use good quality ghee for the best flavor.

Preparing the Semolina

  • Roast the semolina in 1/4 cup of ghee in a heavy-bottomed pan over medium heat until lightly golden and fragrant, stirring constantly to prevent burning.

Making the Sugar Syrup

  • In a separate pan, combine the sugar, water, and food coloring. Bring to a simmer over low heat, stirring occasionally until the sugar dissolves completely and the syrup slightly thickens.

Combining and Cooking

  • Pour the sugar syrup into the roasted semolina. Reduce heat to low and stir continuously until the mixture thickens and pulls away from the sides of the pan, forming a cohesive mass. This may take 10-15 minutes.

Garnishing and Serving

  • Remove from heat and garnish with chopped cashews and almonds. Serve warm or at room temperature. Enjoy!
