Ingredients
For the Malpua Batter
- 1 cup All-Purpose Flour
- 1 ¼ cup Milk
- 1 tsp Fennel Seeds crushed
- ¼ cup Water or as needed
For the Sugar Syrup
- 1 cup Sugar
- 1 cup Water
- 8 strands Saffron Strands
For the Garnish
- 5 Almonds blanched and sliced
- 5 Pistachios blanched and sliced
- Silver Vark optional
For Frying
- ¼ cup Ghee as needed, or oil
Instructions
- In a saucepan, gently simmer the milk over medium heat until it reduces to about ¾ cup, thickening slightly. This step creates a richer base for the malpua. In a mixing bowl, combine the thickened milk, all-purpose flour, and crushed fennel seeds. Whisk until a smooth batter forms, similar to a pancake batter. If the batter appears too thick, gradually add water, a tablespoon at a time, until the desired consistency is reached. Set the batter aside for 15-20 minutes to rest. This allows the gluten in the flour to relax, resulting in tender malpua.
- While the batter rests, prepare the sugar syrup. In a saucepan, combine the sugar and water. Stir over medium heat until the sugar dissolves completely. Add the saffron strands. Bring the mixture to a gentle boil, then reduce the heat and simmer until the syrup slightly thickens. This fragrant syrup will add sweetness and a beautiful golden hue to the malpua.
- Heat the ghee or oil in a flat pan or non-stick skillet over medium heat. Once hot, pour a ladleful of batter onto the pan, spreading it gently to form a small circle. Cook for 2-3 minutes, or until the edges turn golden brown and crispy. Flip the malpua and drizzle about 1 tablespoon of ghee or oil around the edges.
