Ingredients
 

For the Malpua Batter

  • 150 grams All-Purpose Flour also known as maida
  • 50 grams Semolina also known as suji
  • 250 grams Sugar
  • 0.5 tsp Fennel Seeds crushed; also known as saunf
  • 1/2 cup Milk approximately 120ml. adjust as needed for desired batter consistency.
  • 1/4 tsp Cardamom for enhanced flavor, powder; optional
  • Pinch Saffron for color and flavor. soak in 1 tablespoon of warm milk for 10 minutes before adding., optional
  • Vegetable Oil as needed, for frying

For Serving (Optional)

  • Rabri to taste, traditional indian sweetened condensed milk
  • Kheer indian rice pudding, to taste

Instructions
 

Prepare the Batter

  • Combine all-purpose flour, semolina, sugar, crushed fennel seeds, cardamom powder (if using), and saffron (if using) in a large bowl. Gradually add milk, mixing until a smooth, pourable batter forms. The batter should be slightly thicker than pancake batter. Let the batter rest for at least 8 hours, or preferably overnight, in the refrigerator for best results.

Fry the Malpua

  • Heat vegetable oil in a large, deep skillet or kadai over medium-high heat. Once the oil is hot (a small piece of batter should sizzle immediately), carefully pour 1-2 tablespoons of batter into the hot oil for each Malpua, ensuring not to overcrowd the pan.

Cook the Malpua

  • Immediately reduce the heat to medium-low. Gently cook the Malpua, frequently spooning hot oil over the top to ensure even cooking and puffing. Cook until golden brown and crispy on both sides, flipping carefully with a spatula.

Drain and Serve

  • Remove the cooked Malpua from the skillet and place them on a wire rack or paper towel-lined plate to drain excess oil. Serve warm or at room temperature, optionally drizzled with rabri or kheer for an extra decadent treat.
