Ingredients
For the Chocolate Malpua Batter:
- 1/4 cup All-Purpose Flour also known as maida
- 1/4 cup Cocoa Powder unsweetened
- 1 tbsp Milk Powder
- 1/4 cup Milk
- 1 Large Egg
- 2 tbsp Sugar granulated
- 1/2 tsp Vanilla Extract
- 1/4 tsp Baking Soda
- 1/2 cup Ghee clarified butter, for shallow frying
- 2 tbsp Almonds for garnish, sliced
For the Orange Caramel Sauce:
- 2/3 cup Sugar granulated
- 1/4 cup Water
- 1/2 cup Orange Juice fresh
- 1/2 tsp Orange Zest
Instructions
Prepare the Sugar Syrup
- Dissolve sugar in water in a saucepan. Bring to a boil, then remove from heat and let cool completely.
Make the Chocolate Malpua Batter
- Whisk together all-purpose flour, cocoa powder, milk powder, sugar, and baking soda in a large bowl.
- In a separate bowl, whisk together the egg, vanilla extract, and milk.
- Gradually add the wet ingredients to the dry ingredients, whisking until a smooth batter forms.
Fry the Malpuas
- Heat desi ghee in a non-stick skillet or pan over medium heat.
- Pour 2-3 tablespoons of batter into the hot ghee for each malpua, forming small, even circles.
- Fry until golden brown on both sides, flipping carefully with a spatula.
- Remove the malpuas from the pan and drain on paper towels to remove excess ghee.
Make the Orange Caramel Sauce
- Combine sugar and water in a heavy-bottomed saucepan over low heat.
- Stir until the sugar dissolves completely.
- Increase heat to medium-high and let the mixture boil without stirring, swirling the pan occasionally until it turns a deep amber color (about 8-10 minutes).
- Reduce heat to low and carefully add the orange juice and zest gradually, stirring constantly until smooth and any crystals dissolve.
- Remove from heat and allow to cool completely.
Assemble and Serve
- Soak the fried malpuas in the cooled sugar syrup for 1-2 minutes.
- Drizzle generously with the orange caramel sauce before serving.
- Garnish with sliced almonds or pistachios.
- Serve chilled for the best flavor.
Recipe Notes
Expert Tips for the Best Chocolate Malpuas
- For extra richness, use dark cocoa powder.
- Don't overcrowd the pan when frying the malpuas; this will lower the temperature of the ghee and result in soggy malpuas.
- If the orange caramel becomes too thick, add a teaspoon of water at a time until you reach your desired consistency.
- For a more intense orange flavor, use freshly squeezed orange juice and zest from organic oranges.
