Instructions

  • Cook the vermicelli in water according to package directions until tender.
  • Drain any excess water and let the vermicelli cool completely.
  • To prepare the sugar syrup, combine the sugar, water, and cardamom pods in a saucepan. Bring to a boil over medium heat.
  • Continue boiling until the syrup slightly thickens and becomes sticky. This doesn't require a specific string consistency.
  • In a large bowl, lightly mash the cooked vermicelli. Add the crumbled paneer and mash well to combine.
  • Add the whole wheat flour, milk powder, gulab jamun mix, fennel seeds, cardamom powder, and baking soda. Mix thoroughly.
  • Gradually add the milk, mixing until a thick batter forms.
  • Let the batter rest at room temperature for 1 hour. This allows the flavors to meld and the baking soda to activate.
  • Preheat oven to 200°F (93°C). Grease a baking tray with oil and ghee.
  • Drop spoonfuls of the batter onto the prepared baking tray, leaving space between each malpua.
  • Bake for 15 minutes, or until golden brown and cooked through. Baking times may vary depending on your oven.
  • Dip the baked malpuas in the warm sugar syrup, ensuring they are coated evenly. Alternatively, drizzle the syrup over the malpuas for a lighter touch.
  • Garnish with chopped pistachios and serve warm.

Recipe Notes

Good To Know

  • If storing in the fridge, heat in a microwave for a few seconds before serving.
  • Cottage cheese adds richness, so do not skip it.
  • 2 tablespoons of either milk powder or gulab jamun mix can be used.
  • Add milk to the batter based on your desired consistency; do not make it too thin.
  • If using a microwave convection oven with a non-stick plate, grease it and use it directly. For other ovens, line an aluminum tray with parchment paper and sprinkle with oil and ghee.
  • For an extra-crunchy texture, lightly toast the vermicelli in a dry pan until golden before adding it to the batter.
  • For individual servings, bake the malpua batter in a muffin tin lined with parchment paper.
  • To enhance the flavor, sprinkle finely chopped pistachios or almonds over the malpuas before baking.

Expert Tips

  • For a richer flavor, infuse the milk with cardamom pods or saffron strands before adding it to the batter.
  • Adjust the sweetness of the sugar syrup according to your preference. For a less sweet syrup, reduce the amount of sugar or add a squeeze of lemon juice.
  • While traditionally deep-fried, baking malpuas offers a healthier alternative without compromising on taste.

Storage Instructions

  • Store leftover baked malpuas in an airtight container at room temperature for up to two days.
  • Reheat in a preheated oven for a few minutes to restore crispiness before serving.
