  • Wash the cauliflower and grate it. Blanch the grated cauliflower in boiling water for a minute to soften it slightly. This helps the kebabs bind better. Drain well and set aside.
  • In a large bowl, combine the grated cauliflower, boiled chickpeas, gram flour, ginger paste, kebab masala, chopped green chilies, chopped cilantro, chopped mint leaves, and salt. Mix well to form a soft dough.

  • Lightly oil your palms. Take a handful of the dough and shape it into a kebab. Repeat with the remaining dough.
