Ingredients
Kebab Mixture
- 1 Cauliflower medium
- ½ cup Chickpea boiled
- ¼ cup Gram Flour
- 1 tsp Ginger paste
- 2 tbsp Kebab Masala
- 2-3 Chili chopped, green
- ½ bunch Coriander chopped
- 5-6 Mint chopped leaves
- Salt to taste

- Wash the cauliflower and grate it. Blanch the grated cauliflower in boiling water for a minute to soften it slightly. This helps the kebabs bind better. Drain well and set aside.
- In a large bowl, combine the grated cauliflower, boiled chickpeas, gram flour, ginger paste, kebab masala, chopped green chilies, chopped cilantro, chopped mint leaves, and salt. Mix well to form a soft dough.
- Lightly oil your palms. Take a handful of the dough and shape it into a kebab. Repeat with the remaining dough.
- Heat the oil in a large skillet or griddle over medium heat. Place the kebabs in the hot skillet, ensuring not to overcrowd it.
- Cook the kebabs for about 3-4 minutes per side, or until they are golden brown and crispy. Turning them ensures even cooking and a delightful crunch.
- Serve the crispy cauliflower kebabs hot with a mint-yogurt dip.
