Ingredients
For the Vegetable Platter:
- 1 cup Broccoli cut into bite-sized pieces, fresh
- 1 cup Cabbage red, shredded
- 1 cup Carrot shredded
- 1/2 cup Corn Kernels fresh or frozen, sweet
- 1 cup Chickpeas kabuli chana, roasted and seasoned (see notes for seasoning suggestions)
- 1/2 cup Bell Peppers diced, red
- 1/2 cup Cucumber diced
For the Greek Yogurt Dip:
- 1 cup Greek Yogurt full-fat recommended, plain
- 1/2 Cucumber english cucumber, finely diced
- 2 clove Garlic minced
- 1 tbsp Lemon Juice freshly squeezed
- 2 tbsp Parsley chopped, fresh
- 1/2 tsp Pepper black, freshly ground
- 1 tsp Salt or to taste
Instructions
Prepare the Vegetables
- Blanch the broccoli florets for 2 minutes in boiling water, then immediately plunge into ice water to stop the cooking process. Drain well.
- Dice the red bell pepper and cucumber.
- Shred the red cabbage and carrot.
Roast the Chickpeas (optional, but recommended)
- Preheat oven to 400°F (200°C).
- Toss chickpeas with olive oil, paprika, cumin, salt, and pepper. Roast for 20-25 minutes, stirring halfway through, until crispy.
Make the Greek Yogurt Dip
- Combine Greek yogurt, diced cucumber, minced garlic, lemon juice, chopped parsley, salt, and pepper in a bowl. Mix well.
Assemble the Platter
- Arrange the prepared broccoli, red cabbage, carrot, sweet corn, roasted chickpeas, diced red bell pepper, and cucumber in a large bowl or platter.
- Drizzle the Greek yogurt dip over the vegetables.
- Serve immediately and enjoy!
