Ingredients
For the Kebabs
- 3 Potatoes boiled and mashed, medium-sized
- 1/2 cup Rolled Oats
- 1 tsp Oregano dried
- 1 tsp Basil dried
- 1/2 tsp Chili Flakes or to taste, red
- 1 Chili finely chopped, green
- 1/4 cup Bell Peppers finely chopped
- 1/4 cup Coriander finely chopped, fresh
- 50 gm Mozzarella Cheese cubed
- 3 tbsp Corn Flour for coating
- 1 tsp Salt or to taste
- 1/2 cup Vegetable Oil for frying
For the Yogurt Dip
- 3 tbsp Yogurt
- 3 tbsp Mayonnaise
- 2 tbsp Ketchup
- 1/2 tsp Chili Flakes or to taste, red
- 1/2 tsp Lemon Juice
- 2 Olives black, for garnish, sliced
Instructions
Prepare the Kebab Mixture
- Boil and mash the potatoes. In a large bowl, combine the mashed potatoes, rolled oats, chopped bell pepper, coriander, green chili, oregano, basil, and red chili flakes. Add salt and 2 tablespoons of cornstarch. Mix well to form a soft dough.
Shape and Fill the Kebabs
- Divide the mixture into 8 equal portions. Shape each portion into a kebab by rolling and gently pressing it into an oblong shape. Make a small indentation in the center of each kebab and insert a small cube of mozzarella cheese. Seal the kebab around the cheese.
Coat and Fry the Kebabs
- In a separate small bowl, whisk together the remaining 1 tablespoon of cornstarch with 2-3 tablespoons of water to create a thin batter. Dip each kebab into the batter, then roll in the remaining oats to ensure even coating. Deep fry in hot vegetable oil over medium heat until golden brown and crispy. Remove and drain on paper towels.
Make the Yogurt Dip
- In a small bowl, combine the yogurt, mayonnaise, ketchup, red chili flakes, and lemon juice. Mix well and chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
