  • If using fresh green peas, blanch them briefly in boiling water until tender-crisp. This preserves their vibrant color and nutrients. If using frozen peas, thaw them completely.

  • Heat the oil in a pan over medium heat. Shallow fry the marinated prawns until they turn pink and opaque. Set the prawns aside.
  • In the same pan, add the onion paste and sauté until translucent. Then, add the ginger and garlic pastes and sauté until fragrant. This builds the flavor base of the curry.
  • Add the green peas and garam masala to the pan. Stir well to combine.

Recipe Notes

Expert Tips

  • For a richer flavor, marinate the prawns in a mixture of yogurt, ginger-garlic paste, and spices for at least 30 minutes before cooking.
  • Don't overcook the prawns, as they can become rubbery. Cook just until they turn pink and opaque.
  • Adjust the spice level to your preference by adding more or less chili powder or green chilies.

Storage Instructions

  • Store leftover prawns in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in a microwave or on the stovetop, being careful not to overcook.
