  • 1 tsp Sugar optional, to balance the spice
  • 1 tsp Garam Masala adds depth of flavour, optional

Instructions
 

Sauté Aromatics

  • Heat oil in a kadhai or pan over medium heat. Add chopped onions and sauté until golden brown. Add the chopped tomatoes and sauté for another 2 minutes.

Bloom Spices

  • Add ginger-garlic paste, turmeric powder, red chili powder, cinnamon stick, and salt. Cook for 1-2 minutes, stirring constantly, until fragrant. If using garam masala, add it now.

Cook Prawns

  • Add the prawns to the pan and cook until they turn pink and opaque, about 3-5 minutes. Stir gently to prevent sticking.

Creamy Finish

  • Pour in the coconut milk. Bring the mixture to a simmer and cook for another 2-3 minutes, allowing the flavors to meld. Stir in sugar (if using) and check for seasoning.
