Ingredients

- 1 medium Onion finely chopped
- 1 medium Tomato finely chopped
- 1 tbsp Ginger Garlic Paste
- 1/2 tsp Turmeric Powder haldi
- 1 tsp Chili Powder adjust to taste, red
- 2 Cinnamon Stick or 2-3 green cardamom pods
Protein & Dairy
- 250 grams Prawns peeled and deveined
- 1 cup Coconut Milk for best results, full-fat
Other Ingredients
- 2 tbsp Refined Oil vegetable oil or ghee may also be used
- 1.5 tsp Salt or to taste
- 1 tsp Sugar optional, to balance the spice
- 1 tsp Garam Masala adds depth of flavour, optional
Instructions
Sauté Aromatics
- Heat oil in a kadhai or pan over medium heat. Add chopped onions and sauté until golden brown. Add the chopped tomatoes and sauté for another 2 minutes.
Bloom Spices
- Add ginger-garlic paste, turmeric powder, red chili powder, cinnamon stick, and salt. Cook for 1-2 minutes, stirring constantly, until fragrant. If using garam masala, add it now.
Cook Prawns
- Add the prawns to the pan and cook until they turn pink and opaque, about 3-5 minutes. Stir gently to prevent sticking.
Creamy Finish
- Pour in the coconut milk. Bring the mixture to a simmer and cook for another 2-3 minutes, allowing the flavors to meld. Stir in sugar (if using) and check for seasoning.
