  • 1 Pear for garnish; about 1 medium pear, ripe

Prepare the Gelatin

  • Bloom the gelatin by sprinkling it over the cold water in a small bowl. Let it sit for 5-7 minutes to soften.

Make the Panna Cotta Mixture

  • In a medium saucepan, combine the heavy cream, coconut milk, and coconut sugar. Heat over medium heat, stirring occasionally, until the sugar dissolves and the mixture is just simmering. Do not boil.

Infuse with Flavor

  • Remove from heat and stir in the honey and vanilla extract. Gently squeeze out excess water from the bloomed gelatin and add it to the warm mixture. Stir until completely dissolved.

Assemble and Chill

  • Chop the pear into small pieces. Divide the pear pieces amongst serving glasses or ramekins. Pour the panna cotta mixture over the pears. Refrigerate for at least 2 hours, or until set.
